Stage 1 Judges: We cannot fault these delicious sausages. They look glossy, plump and inviting and cut well. They are seasoned well, porky, with a really good texture, We can imagine the best sausage sandwich in the world made with them.

Stage 2 Judges: A plump, inviting sausage, visually appealing with its flecks of herb. We enjoyed the meaty texture, tender skins and great level of seasoning - sound salinity, gentle pepper. The herbs augment the pleasing depth of porkiness. Everything is well balanced here. A gentle, mild flavour, but really pleasing - just what a breakfast sausage should be!

Stage 3 Judges: A tasty, well seasoned, herby sausage. We really liked the fat to meat ratio, and praised the texture of the sausage.

Stage 4 Judges: This sausage has a lovely aroma and appearance to it. The pork is nice and coarsely ground and the herbs and spices complement it well.
