Possibly the most under-rated Christmas Roast! Dry the skin, rub with salt and slow roast for perhaps the most tender and tasty of all the pork joints. Add all the usual Christmas accompaniments (chipolatos, stuffing, cranberry or apple sauce) for a really fine Christmas feast. Keep left overs for sandwiches or Boxing Day lunch.
