1 Short Rib serves 2 adults.
This recipe is simple and delicious:
Place in a slow cooker with a little water for 6 hours or place in a large pan with enough water to cover the ribs - cover and simmer for 4 hours ensuring the meat remains covered at all times
Remove from the cooking liquor and drain carefully reserving a half cup of liquor for each 500gms of ribs
Mix 1 cup of the cooking liquor wih 1 cup of your favourite BBQ Sauce
Place the ribs in a roasting tray and cover with the Sauce/liquor mixture.
Roast at 200c for about 20 minutes or until the sauce has thickened. They are utterly delicious and much more meaty and substantial than pork ribs. They are also perfect for smoking if you are lucky enough to have a smoker or finished on the BBQ instead of the oven.
