If you are wondering what gammon hocks are they are a versatile ingredient that can be used in a variety of dishes, such as ham and leek pie or rustic pork terrine. Great Recipe below for a single gammon hock - just double up for 2!

1 Gammon Hock

1 Litre Cider

1 Large Onion

1 teaspoon cloves

2 bay leaves

A small bunch of fresh thyme

1 tbsp whole peppercorns Instructions:

1. Place the gammon hock in a large deep saucepan, pour in the cider and then top up with more water until the joint is covered. Peel the onion, cut into quarters and add to the pan along with all the other ingredients. 2. Bring to the boil, and then put the lid on, turn right down and leave to simmer for about two hours. When the time’s up, remove the pan from the heat and leave the joint to cool in the liquid for a further half an hour. 4. Drain the cooking liquid.

The gammon is then ready to complete as you wish! We suggest glazing with honey and roasting in a hot oven for 20 minutes. Pull the ham off the bone with a fork and serve hot with your favourite sauce - we like a simple parsley sauce and mash potatoes but a cider and mustard sauce would be equally good. Otherwise use the ham to make a delicious pea and ham stew, ham and leek pie, your favourite terrine! Ham hock is such a treat!
